Whole Grain Blueberry Pancake Recipe!

Looking for some delicious ways to sweeten up breakfast? Here are two of Zacharys & AURA’s favorite breakfast recipes.

Blueberry Pancakes: the perfect combination of fruit and carbs! Pancakes appear to be the ideal breakfast in most American homes, so why not add some healthy twists to the traditional recipe? Whole-wheat blueberry pancakes are loaded with the goodness of whole-grain, and the antioxidant power of blueberries! 

Ingredients You'll Need: 
¾ Cup white whole-grain wheat flour
¼ Cup oat flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup fresh blueberries
1 cup buttermilk
1 large egg – lightly beaten
2 tablespoons melted butter
1 tablespoon coconut milk

Step 1: Combine flour, baking powder, baking soda, sugar and salt in a large bowl
Step 2: Add buttermilk, eggs and melted butter to mixture
Step 3: Stir all the remaining ingredients until they are combined – it’s ok if the batter is a bit lumpy
Step 4: Fold in blueberries
Step 5: Heat your skillet, pan or griddle to medium-hot and brush it with butter
Step 6: Pour  1/3 cup of batter into skillet, wait until the pancake bottom is deep golden in color (40 seconds) and flip with a spatula – REPEAT
Step 7: Serve with butter and maple syrup or confectioner’s sugar and enjoy!
